The 22-year-old won the title at a glittering finale in Glasgow's Princes Square last year.
And she can't believe she'll be handing over her crown to her successor in June.
But the blonde knows there is something that will always be hers to cherish - an entire year of special memories.
Kat, from Dunblane, Perthshire, said: "Where has the time gone? It seems like yesterday when I was crowned Miss Scotland 2009."
The sports-mad babe says winning the glamorous contest has completely changed her life.
And her only consolation at giving up her Miss Scotland crown is that is still Miss UK until December.
The leggy beauty, who works as a professional tennis coach and is pals with Andy Murray, said: "At least when I hand over my Miss Scotland crown I can keep my Miss UK title until December, so that's not so bad.
"But I'm dreading the end of my Miss Scotland reign.
"I've had such a fantastic time and met so many interesting people. I didn't know what to expect when I became Miss Scotland. But what a year I had in store for me."
Kat's trip to South Africa for the dazzling finals of Miss World in Johannesburg in November took her breath away.
She said: "It was wonderful and the contestants from all over the world were so beautiful.
\
"They were also lovely people."
She continued: "I was really dressed up the day I met South African President Jacob Zuma.
"I was wearing a long red Valentino-like dress, white shoes and white gloves, and he shook my hand and said he was delighted to have so many beautiful women in his country.
"And I sang my rap song, Brooklyn To Glasgow, which I recorded and produced, in the talent contest.
"That really got the party atmosphere going. But a really big thrill was coming third in the Beach Babe contest. We all wore stunning gold bikinis and I felt like a Bond girl.
"The show began and there were a million cameras, lights, photographers and film crew.
"As I walked out in front of the audience, I heard the Miss World girls who were watching scream: 'Go Baby Scotland!'
"That was what they called me.
"When I came third I was over the moon. I couldn't wait to hit my Facebook and tell everyone.
"I couldn't believe that out of 112 gorgeous girls, I came third."
As the memories flood back, Katharine smiles. She continued: "I got to wear the most gorgeous Amanda Wakeley gowns.
"I love Amanda Wakeley, she is my favourite designer and to wear her gowns made me feel like a million dollars. The celebrity hair stylists Taylor Ferguson and his wife Ann have also been a godsend.
"I had to look my best at all times, so every week I'd go to Taylor Ferguson's salon in Glasgow, and get the full treatment.
"When they worked their magic my hair really was my crowning glory. It felt, and looked, amazing."
Kat also recalls meeting Tory leader David Cameron, who became a big fan.
She said: "I met him at a media lunch and he was asked which Scot he would choose for his team if he could. He pointed and smiled at me: 'Miss Scotland, of course.'
"Then he challenged me to a game of tennis sometime."
Kat couldn't fail to charm everyone she met, and Scots everywhere besieged her for autographs.
She said: "I am a very friendly girl. I like people so when someone spoke to me I'd chat away. Everyone was so nice and I did the best I could, because after all, I was representing them."
But being Miss Scotland also had its serious moments.
Katharine added: "There's no point in having the clout of Miss Scotland if you don't do anything with it.
"I'm passionate about sport. I believe that by investing more in sport, we could save our nation from obesity.
"I tried to put this message across. I spoke to Alex Salmond and I've approached others who could change our lifestyle habits.
"Scotland is a wonderful country. I think we owe ourselves a healthy lifestyle because we've got everything to live for here
"I'm sure the next Miss Scotland will fly the flag throughout the world, just as much as I did."
